Cooking and fresh fruit are a favourite with my daughters so when BC Blueberry Council invited us to a blueberry cooking class how could we say no? Held at the Dish Cooking School in Toronto and taught by Registered Holistic Nutritionist Andrea Donsky we discovered that blueberries can make a surprising addition to a dish.
We were greeted with ‘Nana Blueberry Smoothies when we arrived as well blueberry infused water. I love the idea of getting creative with fruit instead of just serving it in a bowl. My girls loved making Cookie Monster faces with yogurt dip. The berries didn’t last long after the faces were made.
Our light dinner included a delicious chilled Blueberry Soba Noodle Salad and Blueberry Turkey Burgers I would never have thought of adding blueberries into homemade hamburgers but these were delicious. The whole cooking class experience reiterated that blueberries could be used for more than just a topping on cereal.
I even tried my hand at making Savoury Blueberry Cornbread in my cast iron skillet and it was great. Feeling inspired I sourced 39 blueberry recipes to enjoy these little bundles in different ways.
