Free Meal Plans: Week One

Welcome to my very first meal planning post here at Everything Mom! I am so excited to be able to share the meals that I plan for my family with you! I love to cook, and have been turning out things in my kitchen since I became a foster Mom at 21 years old. With a couple of jobs and a teenager of my own, I know what it's like to be busy and try to get a meal on the table. My philosophy is to create healthy, delicious, easy to make meals at home that my family will eat. You will find that I tend to make lots of things that can be frozen or prepped ahead, with lots of variety and tons of fresh veggies.

Ready? Set? Let's go!

MONDAY

Freybe Turkey and Chicken Sausages
Roasted yams and taters
Steamed veggies


I love Freybe's Turkey and Chicken Sausages. We just popped them in a pan in a 350 F oven with a little bit of water on the bottom of the pan and baked them until they were heated through and browned. In the rack underneath, I made the roasted yams and taters. My recipe does say the yams and taters need a 425 F oven, but they will still work at 350 F. It just took a little longer, and I turned the oven up to crisp them up for the last few minutes. We had steamed peas with this, but sub in your favorite veggie.

TUESDAY

Ham and Pea Soup
Quickie cheese biscuits

Cheap to make and tasty to eat, this soup tastes wonderful with some fresh thyme from the herb garden. Busy Mom tip: Freeze the leftover biscuits and the soup in single sized servings, all ready to pull out and tuck in a lunch box.

WEDNESDAY

Slow cooker Beer Braised Beef
Garlic mashed potatoes

Corn on the cob

This is Jake's all time favorite beef recipe. Tossed in a slow cooker, this one is so easy to prepare! If you don't have a slow cooker, don't despair-there's also oven instructions. I love it on a crisp fall day, and leftovers make really delicious lunches.

THURSDAY

Grilled Chicken Mango Kebabs
Coconut Rice

Don't put that BBQ away just yet! I make these in the oven, but I can imagine that on the grill they would be heavenly. A bit spicy, sorta sweet, they are really delicious. Busy Mom tip: When you get home from shopping, pop the chicken in the marinade right away, so that you can have it ready to go the next day. I don't recommend freezing the chicken in the marinade.

FRIDAY

3 Cheese Lasagna Roll Ups Caesar salad Garlic Bread

I love this recipe because it's so much easier than regular lasagna, and who can resist a cheesy pasta dish? You can buy your garlic bread if you wish, I tend to make my own. I DO buy a Caesar salad kit, just to make life a little easier.

Wow! These look really good, easy and straight forward. I look forward to trying some of these meals.

I was wondering if it would be possible to include tips for freezing, or making things ahead. For example, with the slow cooker beef - am I able to do any of the prep the night before so that all I have to do is take my slow cooker insert out of the fridge and turn it on before I go to work.

Hi Keltie!

Often the freezing/make ahead instructions are in with the recipes if you follow the links. Honestly, I've never prepped the braised beef the night before and then just popped it into the slow cooker, but I'm pretty sure you could.
