Nutella Chocolate Chip Cookie Ice Cream Sandwiches

I’m not a big fan of spending time in the kitchen but my desire to eat, especially sweet treats, often talks me into baking. As if I need more encouragement, Friday, May 15 marks National Chocolate Chip Cookie Day! Can you think of a better reason to bake (and eat) a batch of chocolate chip cookies? Add to that my growing collection of Hersheys CHIPITS in my baking cupboard.

I love a traditional chocolate chip cookie, like this recipe from HersheysKitchen.ca:

CHIPITS Chewy Milk Chocolate Cookies Recipe

Ingredients:

2/3 cup melted butter
2 cups lightly packed brown sugar
2 eggs
2 tbsp hot water
2 2/3 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 2/3 cups CHIPITS Milk Chocolate Chips

Directions:

  • Heat over to 375°F (190°C).
  • In large bowl, beat melted butter, brown sugar, eggs and hot water until smooth.
  • In medium bowl, mix together flour, baking powder, baking soda and salt.  Stir into butter mixture until blended.
  • Stir in milk chocolate chips. Drop from small tablespoon onto ungreased cookie sheet.
  • Bake 8 to 10 minutes.  Let cool 1 minute; remove to wire rack.

Makes 5 dozen cookies (though I used a tablespoon as a guide since we were making sandwiches and it made about 3 dozen).

I found a standard 200g bag of CHIPITS worked perfectly in this recipe, give or take the few samples you nibble on during the baking processes. Making cookies makes me hungry so of course I need to snack. Don’t you?

Traditional Chocolate Chip Cookies

These chocolate chip cookies are a perfect treat on as is but seeing as the warmer weather is here (well, it will be soon enough) why not add a warm weather twist by making an ice cream sandwich. They are so easy to make, we do them often when BBQing, and they taste so much better than those store bought varieties. I decided to make some Nutella Ice Cream in our ice cream maker. Like most last minute baking decisions my supplies were low but I found an easy 2-ingredient recipe from The Cooking of Joy, which worked in a pinch.

Combining just Nutella (it basically used the end of our large jar) plus a can of evaporated milk mixed together. I did discover that even on the highest (coldest) ice cream setting that this mix didn’t set entirely. I had to let it sit overnight in the refrigerator.

Just scope a tablespoon on one cookie and squish down with a second chocolate chip cookie and tada…..Nutella Milk Chocolate Chip Cookie Ice Cream Sandwiches. Of course you could use any kind of ice cream between these delicious homemade cookies. They such a great treat and a nice alternative to just a cookie or a bowl of ice cream.
