Take a look at these easy favorites, most of which can be made ahead. If you’re looking for a dessert to pair up with these, try some Carrot Snacking Cake or Peanut Butter Cup Cookies.

MONDAY

apple buttermilk pancakes

Take advantage of the bounty of apples this time of year and whip up a batch of these tasty pancakes. The other night I tried peeling, coring, and slicing up four apples, then sauteing them in a few tablespoons of butter. When the apples were soft, I added a few heaping tablespoons of brown sugar, which melted into a buttery, caramel-like sauce. Let it bubble just a bit, watching carefully. Spooned over the pancakes, it was an amazing treat that completely eliminated the need for syrup!
