My stomach is growling just writing this article! Fall is a great time for seasonal produce like squash and apples, digging out the slow cooker, and storing away things in the freezer for a busy day. I found some great options for you this week; breakfast for dinner, creamy slow cooker chicken (with bacon!) a few vegetarian options, and a do it your way stir fry. Home cooking really can be quick, easy, inexpensive, and delicious!

MONDAY

I had wanted to make these forever, but held off because my family claimed they hated squash. Finally, I just ignored them, took the plunge anyway, and I’m glad I did! These delectable, buttery bits o’goodness were devoured in no time. They make a delicious fall meal, and would be a perfect vegetarian option around Thanksgiving.

Pressed for time? Not much in the fridge to choose from? Have breakfast for dinner! These breakfast tacos from Merry look delicious stuffed with cheese, eggs, and sausage. You can vary the fillings to your liking and they are very easy and quick to make.

Shannon has the right idea-a versatile stir fry that allows YOU to pick the meat, veggies, and only use what your family loves! I love snap peas (lightly steam them first), red pepper, mini corn cobs, and cauliflower. What’s in your stirfry?

This tasty chicken is from Busy Mommy Media. Get it ready in the morning, turn on your slow cooker, and come home to dinner simmering away! What more could you ask for than creamy chicken topped with bacon?!

FRIDAY

Chock full of veggies, beans, and mild cheese, these are a great resource to have in your freezer. Double the recipe to bake some up for supper, then roll up the unbaked burritos in cling film, over wrap with foil, and pop into the freezer for another day.
