Katie, author of The Muffin Myth, is amazing. From creating and testing all her own recipes to photographing and blogging them, I can always count on her to have something delicious for me to try. I love to have soup waiting in my freezer to be tucked into lunches throughout the week, and this one is a great twist on traditional tomato soup.

This Mark Bittman recipe from the latest issue of Bon Appetit magazine caught my eye. A vegan pancake recipe, it’s topped with delicious tropical fruit and pistachios to give it a little something extra. We loved the different taste and it was so easy to make!

This chicken is so delicious! We have added it to salad, with pasta, in sandwiches, and on it’s own. The secret is to make sure you let it marinade well and don’t overcook it.
