With the talk of the rising costs of food, this week I included three meatless meals. Going without meat doesn’t mean tofu and lettuce, but what about a great chili, or baked pasta? Pair them up with a big green salad and everyone will be happy. Eating less meat is easier on your wallet, better for you, and easier on the environment. Go ahead, try it!

My husband would eat chicken with salad every day if he could, and I thought I was in a rut until I saw this fantastic salad over at Two Peas and Their Pod. Oh my! Boring salads, begone! The great thing about dinners like this is that you can mix and match things to suit your own family’s tastes, or they are easy to adapt for kids.

Veggie chili is a great way to introduce your family to some meatless meals. I love serving mine with some great bread to dunk, and a big salad. If you have leftovers they are great stirred into pasta and baked, ladled over hot baked potatoes and topped with cheese, or tucked into a lunchbox.

I love sliders. Little sandwiches, stuffed with all kinds of yummy fillings, the perfect size for little hands or enough for us bigger people to eat a couple. These ones by Evil Shenanigans feature shredded beef with a carrot apple slaw, and look so good I can’t wait to try them myself. These would be great for a party, too!
