When I think of dads, I think of grilling-and this week’s meal plan has some fantastic Father’s Day recipes. What guy wouldn’t want to try out beer can chicken, or even burgers with chipotle lime mayo? Let the kids go wild with a macaroni and cheese topping bar, or if it’s too hot to cook make it a taco night where everyone can fill their own. If you’re dropping by the Farmers’ market this week and pick up some sweet cherry tomatoes, make sure to try the roasted cherry tomato pizza. Slow roasting cherry tomatoes brings out their natural sweetness and I have to keep my teen from eating them straight off the pan.

This pizza over at Chasing Tomatoes is one of my favorites. Slow roasted cherry tomatoes on top of a whole wheat crust, dotted with creamy Boursin cheese, was inhaled at my dinner table and then requested the next day. If you click through to the link there’s directions to home made crust and sauce as well! Try adding crumbled bacon and topping it with chopped fresh basil for a BLT feel.

Tacos are a fun food to make in the summer, like this recipe over at Little Locavores. The great thing about tacos is that you can just prep all the fixings, then put everything on the table and everyone can build their own tacos to their liking. I like mine with Spanish rice and some Greek yogurt instead of sour cream, or how about Andrea’s guacamole?

You know how when you make macaroni and cheese, some people like additions to theirs while others want it plain, unsullied by the hands of bacon or veggies? Why not set up a Top it Yourself Macaroni and Cheese bar? I drool just thinking of it.

When I think of summer I think of burgers, and after rooting through our cupboards I came up with this recipe, which was an instant hit in our house. The sweetness of the caramelized onions, combined with the spicy hit of chipotle mayo, made it absolutely mouth watering.
