Fast and healthy is the name of the game this week! Most items can be whipped together quickly, and if you are fortunate enough to have a BBQ out, a few can go on the grill. Lots of fresh veggies are included so make a stop by your local farmer’s market in the next month to stock up!

Citrus Chicken Kebabs

This has become a family favorite! The sweetness of the oranges, combined with the delicious spice of the honey mustard sauce was a hit with my hard to please family. I served it with a rice salad that also has hints of orange and mint, and some fresh veggies in it to boot.

Food Revolution Friday is still going on over at Notes From the Cookie Jar! Jamie Oliver challenged those in his Twitter stream to try making this omlette, and send him a photo. Here’s mine! I filled it with turkey bacon, Cheddar, and scallions. Omlettes are a tasty, quick dinner when you need something fast and healthy.

Grilled veggies, fat juicy prawns, tender orzo, salty feta, and a pesto lime vinegrette combine to make this delicious salad. The leftovers make a great lunch the next day, too!

Quickie Steak Wraps

Faced with a busy night, I made this recipe up in my head and threw it all together. Jake insisted that it was so good, I share it with you! Spiced strips of steak, loads of fresh produce, all wrapped up in a tortilla makes for a finger licking dinner.

FRIDAY

Cobb Salad

Inspired by a picture I saw in a magazine and a trip to the farmer’s market, I decided to make cobb salad, my way. It’s really easy and can be customized to however you like it. You can eyeball the measurements, because this is one you just figure out as you go!

Cobb Salad

salad greens

1 hard boiled egg per person, peeled

tomato, seeded and chopped (about 1/4 per person)

avocado, peeled and cubed (about 1/4 per person)

2 pieces of turkey bacon, grilled and sliced (per person)

cooked chicken or turkey, cut into cubes (about 1/3 cup per person)

chunk of blue cheese (we loved Rosenborg Bleu Cheese with Pear)

Put a handful of greens on each plate. Top with a line of each topping, as in the picture, starting with the sliced egg, then tomatoes, avocado, blue cheese, chicken, and bacon. Serve with your favorite salad dressing and thick slices of garlic bread.
