Halloween is right around the corner and kids love spooky food. Use that to your advantage and sneak some beets into them! This is a perfect protein packed meal and can be served with baked blue corn chips, raw veggies, or even rolled up in a whole wheat tortilla for a wrap. After a yummy dinner like this you can send your kids out to get candy with a clear conscience.
You don’t taste the beets, but you could use 1 cup of cooked spinach, or even 1 avocado in place of the beets to make it a green dip instead of a red one.
Spooky Vampire (Beet) Dip
Serves 6 to 8
Ingredients:
- 1 cup beet, cooked
- 1 cup chickpeas, cooked
- ½ cup silken tofu
- ½ teaspoon ground cumin
- ¼ teaspoon dried garlic (or ¼ clove fresh)
- juice of ½ lime
- ground hot pepper, to taste (cayenne, chipotle, red pepper flakes)
- salt, to taste
Put everything except the hot pepper and salt into a food processor and process until smooth. Make sure to scrape the sides down so that the whole dip gets a creamy consistency.
Taste and then add the salt and hot pepper until it’s just the way you like it.
