Sparkling Watermelon Refresher

When I think of summer, watermelon comes to mind and this Sparkling Watermelon Refresher is the perfect drink to savour on the back deck.

When I was younger we played a football-type game at summer camp where two teams had to play against each other, trying to get a greased-up watermelon across the other team’s goal. Of course we all enjoyed the spoils at the end of the game as the watermelon was sliced up.

My own kids will easily devour a watermelon, something we keep sliced in the fridge for easy access. It makes a great alternative to hydrating yourself in the summer sun (though it feels like that is in short supply this summer). I even tried my hand at making Watermelon Mojito during a backyard barbecue. The cocktail was lovely but indeed a lot of work. This Sparkling Watermelon Refresher recipe from President’s Choice seems to involve much less work and is something the whole family can enjoy.

Ingredients

  • 4 cups (1 L)  PC Sparkling Watermelon Lemon Soda
  • 1 can (355 mL)  PC Ginger Ale
  • 1 cup (250 mL)  PC Old-Fashioned Lemonade with Pulp
  • Half  lemon, sliced in thin rounds
  • 4  large mint sprigs
  • 4 cups (1 L)  ice cubes

Instructions

In large glass pitcher, stir together watermelon soda, ginger ale and lemonade. Add lemon slices, mint sprigs and ice cubes. Stir well and serve.

I love the PC Sparkling Sodas and a Watermelon Lemon version sounds lovely enough to enjoy on its own but this recipe seems too easy not to try. I’m sure you could update it for an adult version too if you wished.
