Pulled BBQ Chicken Quesidillas
Quesidillas are so easy-and so customizable that every member of the family can create their own! These ones use up leftover pulled BBQ chicken from another recipe and then make it mexy. There is no need for a formal recipe here, but rather a guideline for creating your own!
1 package whole wheat fajita sized tortillas
Leftover slowcooker pulled BBQ chicken
Cheddar cheese, shredded
sweet red or yellow pepper, sliced
red onion, sliced thinly
chopped fresh cilantro
1/2 jalapeno pepper, seeded and minced finely
lime
1 avocado, cut into chunks
salsa
On a large baking sheet, lay 4 tortillas. Top with a bit of cheese, and then layer the chicken, sweet peppers, onion, minced jalapeno, and cilantro. Top with a little more cheese. Zest the lime over all, then cut the lime in half and squeeze a little juice over each as well. Top each with the another tortilla. Bake at 425 F until they are toasted and browned, and the cheese is melted and bubbling (about 10 minutes).
