A few years ago our family went on a trip to South Dakota, and I was completely stoked about seeing buffalo. We drove through Custer National park and I was practically glued to the windows of the car, trying to catch any glimpse of the amazing beasts that I could. They were hiding. I was so disappointed that night that I settled for a dry, tasteless buffalo burger instead.
Buffalo is a leaner meat than beef, and become fairly widely available now. I found some at the grocery store and in a burst of creativity, my teenager and I brainstormed up this recipe for our own burgers. Far from dry and tasteless, these babies were amazing.
Kevin’s Buffalo Burgers
1 lb ground buffalo
1 tsp horseradish
2 tsp Worcestershire sauce
1 egg, lightly beaten
¼ cup breadcrumbs
½ tsp thyme
1 tsp oregano
Salt and pepper
2 garlic cloves, minced
¼ cup minced onion
1 tbsp olive oil
Splash of water
In a large bowl, mix together the horseradish, Worcestershire sauce, egg, breadcrumbs, thyme, oregano, garlic, onion, salt and pepper, and olive oil. Add the buffalo and using your hands, mix everything together. Add a bit of water until everything is blended well.
Divide the mixture into 4 balls and shape into thin patties. In a fry pan over medium high heat, fry each patty until no longer pink in the middle and cooked through. Be gentle when flipping them, as the burgers are tender and might come apart.
Sandwich into whole wheat buns topped with lettuce, tomato, and your favorite cheese.
