Are you always stuck with a bunch of leftover Easter ham that you’re not sure what to do with? My teenager and I whipped up these French toast Ham and cheese sandwiches to have with some soup the other day. They are really good with some chock full of veggie minestrone.
Ham and Cheese French Toast Sandwiches
Sourdough or other dense white bread, a little stale is good
splash of milk
First, make your sandwiches. Spread the mustard on one side of the bread, then layer in some ham and cheese. Now that you have a sandwich, get a shallow bowl and crack your egg in. Beat it lightly, and add about a tbsp of milk.
Melt a little butter in a non stick pan over medium low heat, then dip your sandwiches in the egg/milk mixture and add to the pan. Fry them lightly, turning gently when they are golden brown and fry the other side.
Serve with soup, salad, and enjoy!
