3 Cheese Lasagna Roll Ups Caesar salad Garlic Bread

I love this lasagna recipe because it’s so much easier than a regular lasagna recipe, and who can resist a cheesy pasta dish? You can buy your garlic bread if you wish, I tend to make my own. I DO buy a Caesar salad kit, just to make life a little easier.

12 lasagna noodles
1 egg
1 pkg (10 oz) frozen chopped spinach, thawed and drained (actually sqeeze the water out!)
2 cups of cottage cheese (I’ve tried ricotta and it’s a bit dry)
2 cups mozzarella cheese, grated
1/3 cup grated Parmesan cheese
1 garlic clove, minced
1/4 tsp pepper
1/4 tsp basil
3 1/2 cups of spaghetti sauce

 

Preheat oven to 350 F. Cook noodles in boiling salted water according to package instructions. Drain well and rinse with cold water. In a medium sized bowl, mix together the egg, spinach, cottage cheese, Parmesan, 1 cup of mozzarella cheese, pepper, and basil.

Coat the bottom of an 9×13 inch baking dish with about 1 cup of spaghetti sauce. Set aside.

Spread out your noodles on a work surface and top with cheese mixture, spreading to the corners. Roll them up and place, seam side down, in the baking dish. Top with remaining spaghetti sauce and cheese.

Grease one side of a piece of aluminum foil, and place greased side down over the dish. This keeps the cheese from sticking to the foil.

Bake for 35 minutes covered, 10 uncovered, then let sit 5 minutes before serving. Makes 4 servings.

Garlic Bread
Why buy garlic bread when you can make your own? It’s easy, too.

5 thick slices of crusty french bread
1/3 cup butter
5 cloves of garlic, minced

Pre-heat broiler. In a saucepan on the stove, melt the butter. Add the garlic and allow it to simmer, stirring, until it’s fragrant. Keep the heat low and don’t allow the garlic to brown. Remove from the heat. Place the bread on a cookie sheet and brush with the butter. Spoon out some of the garlic pieces and smear them on top. Place pan under the broiler and watch carefully, until the garlic bread has toasted and the edges are golden. Remove.
