Seared Steaks with Caramelized Onions
Roasted Brussels Sprouts with Pine Nuts
Steaks are incredibly easy to make and delicious. Simple to sear on the stovetop and then finish in the oven, I topped this one with caramelized onions, then served them with a side of roasted Brussels sprouts and yams.
1 New York strip steak per person, about 1 inch thick
Montreal Steak spice
1 onion, sliced
butter
Heat oven to 350 F.
First melt some butter in a fry pan over medium heat and add your sliced onions. Keeping the heat at about medium low, gently stir and cook until they become a deep brown. This should take about 10-15 minutes, and in the mean time you can start the steaks.
Using an ovenproof pan, put a glug of oil in your fry pan and get it good and hot on the stove. Dry the steaks of with some paper towel and add them to the pan. Sprinkle with Montreal steak spice.
Let the steaks cook until they are browned before flipping over and searing the other side. Sprinkle with more steak spice.
Put the entire pan in the oven for about 5 minutes, watching carefully. To have a medium steak, when you press the meat it should be as springy as the fleshy area below your thumb. It’s a bit hard to judge at first, but once you practise a bit you’ll get it right. Let the steak rest for about 10 minutes before slicing up and serving, topped with your caramelized onions.
