You’ve probably seen countless pieces on what kids eat for breakfast around the world, like this article from the New York Times. I’m reminded of how boring our toast and cereal often seems. If you’re looking for something fairly quick to pull together that will definitely have the kids scurrying to the breakfast table try this Korean-Style Breakfast Sandwich recipe.
Korean-Style Breakfast Sandwich
Prep Time: 15 minutes
Cook Time: 15 minutes
4 slices whole wheat bread, lightly toasted
8 slices Armstrong Monterey Jack with Jalapeno
4 fried eggs
1/3 cup (75 mL) kimchi, finely chopped
2 tsp (10 mL) toasted sesame seeds
2 tsp (10 mL) Sriracha hot sauce
1/2 cup (125 mL) cucumber slices
Preheat broiler. Top each slice of bread with 2 slices of Monterey Jack with Jalapeno cheese; broil for 1 or 2 minutes or until cheese melts.
Top each sandwich with a fried egg, kimchi, sesame seeds and hot sauce. Serve with cucumber slices.
Tip: Add ham, bacon or peameal bacon for a more decadent breakfast sandwich
