Meal Plan: Pulled BBQ Chicken Quesidillas

Written by Karen Humphrey

Is the lunchbox a challenge already? Some of this week's meals can be easily incorporated into a lunchbox. They are also so easy your older kids can tackle dinner and do a great job of it! Check out the link for home made whole wheat pizza pretzels, and warm yourself up with a great bean and sausage stew.

Inspired by Mimi's Cafe in California, these pesto chicken wraps make a delicious lunch or a light dinner, paired up with soup or a salad. They are also really great tucked into a lunch box!

I love squash, and Shannon happily pointed out this recipe to me. Cream cheese, roasted red pepper, and butternut squash sound like a delightful combination, and I can't wait to try it. Although, I think this would go wonderfully with my home made pizza pretzels for the kids.

Sometimes simple is best. On a cool fall night, try this sausage and bean stew to fill you up. Becca sent me the link to this, and I think it would be really tasty with a nice loaf of crusty bread and a tossed salad.

Ginger, garlic, and marmalade come together to glaze chicken in a sticky sweet coating in this recipe from Problem Solvin Mom. You can pull out the BBQ to grill this or bake it in the oven, too! Yum! Serve with some steamed rice, stir fried veggies, and your night is complete.
