Free Meal Plans: Black Bean Soup

MONDAY

butter chicken and riceWhen Jake began raving about the butter chicken being served in his high school cafeteria, I decided to try to make my own! I don't profess to know anything about Indian food, but this recipe is amazing. Fragrant, marinated chicken in a spicy, creamy sauce, this is a curry chicken worth trying!

The marinated chicken is delicious even without the sauce, and would be wonderful shredded up and tucked into wraps.

So easy that even my 13 year old makes them, these versatile (and scrumptious meatballs are easy to make ahead and then stash in the freezer. Rich lamb, salty feta, and a bit of rosemary pairs up deliciously tucked into a pita with tomato, lettuce, cucumber, and tziziki.

sausage pastaI love this casserole-spicy sausage, yummy tomato sauce, and lots of mozzarella cheese! It's a great way to warm up on a cool fall day. Since the recipe is large, I often bake half and then freeze the other half for another day when I need something to just pop into the oven.

Italian Sausage Baked Pasta

Did you know that you can make cedar planked salmon in your oven? Yes! You can! Pick up an untreated plank and make sure to soak it in water well, then just follow the recipe. It's so easy, and the salmon turns out juicy and tender.

Black Bean SoupWith a bit of spice and chock full of healthy beans and veggies, this soup is something you can feel good about serving to your family! Serve it with a variety of toppings so that everyone can choose their own, or change things up by melting some cheese over tortilla chips for some quick nachos.

Busy Mom Tip: Make the soup ahead and freeze in single serving sized containers for a quick meal.
