What do you eat when you are on a road trip? Check out this post on Chasing Tomatoes, where I detail what we ate while we’ve have been on the road this summer. I love these veggie sandwiches, and the chick pea salad is delicious too. Plus they are super easy and won’t heat up your kitchen at all!

I love kebabs. I’m not sure what it is about them, but little sticks with meat and veggies threaded on them make me happy. These beef kebabs from Simply Recipes look so good, but if you scroll down there’s a bonus-chicken, tuna, or even salmon kebabs! You can go kebab crazy!

Talk about simple, over at Simple Bites is a great article about making paella, which really is a chicken and rice dish. The great thing about this recipe is that you can add chicken, seafood, or sausage, to round it out the way you like. We’ve made paella with spicy sausage, but I think I’d love to try it with some shrimp as well. Add a green salad and some crusty bread, and you’re all set!

I’ve seen it all over twitter; “I have a ton of kale. What do I do with it?” This soup recipe is my answer. Honestly, I don’t eat a lot of kale, but this soup was really good. Make sure to pre-soak the beans so that they cook up quickly for you.
