MONDAY

chicken salad sandwich

We love a good chicken salad sandwich and this one was dressed up with asparagus and proscuitto. You could serve this one for company with a nice tossed salad for a light dinner or nice lunch. The salty proscuitto with the creamy chicken and crunchy asparagus was amazing!

THURSDAY

rice paper rolls

Hot weather getting to you? A good friend of mine says that these rice paper rolls are so easy, and you can fill them with all kinds of fantastic fresh ingredients. Perfect for a light dinner, lunch, or even as an appetizer. Try some for your kids snacks? Paired up with some spicy peanut dipping sauce they are just the thing when the temps soar outside.

FRIDAY

salmon fish cakes

I admit, I was skeptical of trying this recipe. Every single time I have tried salmon fish cakes, they have turned out dry and unappetizing.

Love every idea you have in this meal plan. As I scrolled down the page I kept saying to myself - oh! love that, got to try that! Thank you for these ideas and recipes. I've also had no great luck with salmon cakes, and will definitely give this one a try, along with the chicken salad...humm.
