There are so many delicious, healthy things to choose from this week.  From a bok choy noodle bowl to authentic Italian meatballs, vegan spiced pancakes and tomato quinoa soup, you will be on the road to good health in no time. Even the rosemary mustard chicken is amazingly versatile, and you can tuck it into sandwiches or toss in salads.

TUESDAY

Free Meal Plan: Tomato Fennel Quinoa SoupKatie, author of The Muffin Myth, is amazing. From creating and testing all her own recipes to photographing and blogging them, I can always count on her to have something delicious for me to try. I love to have soup waiting in my freezer to be tucked into lunches throughout the week, and this one is a great twist on traditional tomato soup.

WEDNESDAY

Free Meal Plan: Spiced Coconut Pancakes with Tropical Fruit SaladThis Mark Bittman recipe from the latest issue of Bon Appetit magazine caught my eye. A vegan pancake recipe, it’s topped with delicious tropical fruit and pistachios to give it a little something extra. We loved the different taste and it was so easy to make!

THURSDAY

Free Meal Plan: Easy Fish and Bok Choy Noodle BowlA Little Bit of Momsense has the right idea; light broth, a bit of fish, some noodles, veggies, and you have a fantastic, adaptable dinner that surely everyone will like. This one is so versatile you can switch up all the veggies and fish to chicken even, but the main thing is that it’s fast, fresh, and delicious.
