Free Meal Plan: Rosemary Garlic Chicken with Apple and Fig Compote

Written by Karen Humphrey

If there’s one thing I’ve never believed in, it’s kid food.  Sure, when they are really little perhaps food is more simple, because we don’t want to overwhelm them with flavors that are too strong or spicy.  When kids are older though, why not?  I know many who love a hot salsa, pesto, or a good strong cheese.  Try a spicy bit of sausage in a creamy butternut squash soup, lemon risotto, or a roasted garlic rosemary bit of chicken and see what happens-they just might surprise you.

MONDAY

Free Meal Plan: Butternut Squash Chorizo SoupSmoky and full of spice, Chorizo is a favorite in our house. Combine it with some creamy butternut squash, and you have a soup that is perfect for a winter day. We served it with hot biscuits and salad while the snow blew outside, and my teenager commented that he wanted to lick the bowl.

THURSDAY

Free Meal Plan: Lemon RisottoYou know that you are a food blogger when you see Meyer lemons at the grocery store and squeal in excitement. A specialty outside of California, I don’t expect you to have them-but they would be especially good in this lemon risotto from Vino Luci. Barb says that the recipe is not hard, and really delicious! I may have to use my Meyer lemons to make some.

FRIDAY

Free Meal Plan: Rosemary Garlic Chicken with Apple and Fig CompoteTender chicken rubbed with rosemary and garlic then roasted slowly in the oven are delicious with apples and figs spooned over top. Served with mashed potatoes and salad, this is a company worthy dish that is made ahead, so the actual cooking time is a lot less work than you’d expect.
