Free Meal Plan: Peanut Butter Pancakes

For Father's day, try a delicious steak and mango wrap or snag our recipe for Peanut Butter Pancakes to surprise Dad for breakfast. He'll love them! This dish was such a hit in our house that my 14 year old ate three helpings, then insisted that the leftovers just HAD to be his. It's a super fast, full of flavor way to make salmon. Yum!

Looking for something a little different? Do you like foods that have that sweet/salty thing going on? Then these are the pancakes for you. Try them for Father's Day breakfast with some chocolate chips, even! We loved them topped with bananas, drizzled in maple syrup, and served with some sausages.

Peanut Butter Pancakes

Adapted from The Crepes of Wrath

1 cup flour

1 tbsp baking powder

1/2 tsp salt

3 tbsp sugar

1 egg

1 cup plus 3 tbsp milk

1/2 cup peanut butter, melted (creamy recommended)

2 tbsp vegetable oil

1 tbsp butter

In a large bowl, whisk together the flour, baking powder, salt, and sugar. Set aside.

Whisk together the egg, milk, peanut butter, and vegetable oil. Dump them into the flour mixture and gently whisk. Add a little more milk if you think it's too thick.

Meanwhile, heat up your griddle. Melt a little butter on it and move it around to grease the whole thing. Pour out the batter by 1/4 cupfuls. They will spread a bit, but they won't get lots of bubbles like regular pancakes. Cook about 3 minutes per side.

Makes 10-12 pancakes
