Free Meal Plan: Peanut Butter Banana Crepes

Written by Karen Humphrey

Summer is heating up outside-how is it in your kitchen?  Some days it’s just too hot to cook, but you need to eat, so what to do?  These recipes will keep you cool in the kitchen as they don’t require you to turn on that oven at all.  If you need something kid friendly, as a nod to my own childhood, I included peanut butter banana crepes.  Breakfast isn’t just for mornings anymore!

MONDAY

Free Meal Plan: Fresh Corn Salad with Spicy Shrimp and TomatoesTender shrimp, some spicy flavor, a bit of lime, sweet corn and cherry tomatoes makes this salad sound scrumptious-and not mention it looks just beautiful! Honey Sage is a fairly new food blog that I’m so glad I’ve discovered. Brooke hails from Texas, and her site is so full of mouthwatering photos it was hard to choose just one. I decided to start with this summery salad. I think it would be even better served with thick slices of focaccia.

TUESDAY

Free Meal Plan: Quinoa Veggie BurgerThis burger was on the front cover of Chatelaine and while I was getting groceries, I couldn’t help but stare at it. Quinoa? In a burger? I have never tried that. Of course a food photo says a thousand words, and before I knew it, I just had to feature it in this week’s meal plan. Quinoa is so good for you, and it’s healthier for you and the environment to go veggie now and then.

WEDNESDAY

Free Meal Plan: Radiatori with Tomato Cream sauce and fresh basilPinch my Salt always has such great food photos. Summer may feel a little too warm for pasta, but sometimes on the cooler days a simple dish can be just perfect. With basil sprouting in the herb garden and local tomatoes overflowing in the bins at the store, I love making simple dishes like this.

THURSDAY

Free Meal Plan: The Ultimate Grilled Beer BratwurstSometimes I feel like I’m Cooking By the Seat of My Pants! Jerry’s recipe for beer brats looks SO good that I’m going to have to put this in my “must make” list. While I’m not a fan of drinking beer, I’m definitely not averse to cooking with it. You don’t have to use brats either, Jerry says, “this method works wonderfully for any uncooked link sausage in a natural casing.” So grill away!

FRIDAY

Free Meal Plan: Peanut butter banana crepes with maple syrupWhen I was a little girl, my Dad would whip up crepes or thin pancakes as he called them, for us on weekends. We’d swipe one while it was still warm and sprinkle bits of sugar on it before rolling and eating.
