Free Meal Plan: Kevin's Buffalo Burgers

As rainstorms blew themselves through this week bringing hail and bits of snow, we longed for summer. It shows, too-Kevin and I created a delicious buffalo burger in honor of our road trips to South Dakota and then in a fit of creativity, topped it off with French onion soup. Piping hot, cheesy deliciousness waits for you in the recipes this week, from a baked manicotti to sneaking in the nutrients with a pumpkin mac and cheese. Looking for something lighter? There’s also a Korean beef stirfry that I’m sure will do the trick. Just try not to lick the computer screen.

Don’t let the idea of pumpkin weird you out; not only is it lower in fat, but it’s chock full of nutrients and freezes really well. I’m going to have to try this one!

Free Meal Plan: French onion soupStringy, gooey cheese clinging to your spoon, caramelized onions, what better soup to have on a cold February day? French onion soup has always been a favorite in my house. This recipe over at Chasing Tomatoes is really fast, and absolutely delicious. Don’t worry if you don’t have special soup bowls to go under the broiler, any old bowl will do.

Free Meal Plan: Stuffed Manicotti with MarinaraI love cheesy, stuffed pasta, and over at Cooking by the Seat of my Pants this recipe for manicotti looks delicious. Manicotti looks time consuming, but it really is very easy. You can make it ahead, and even pop some in the freezer for another day when you really don’t feel like cooking.

Free Meal Plan: Korean Beef Rice BowlSometimes, I get bored of the same old stirfry type dishes, but Steamy Kitchen has a pile of fantastic, mouth watering recipes I can’t wait to try like this amazing Beef Rice bowl. The great thing about stir fries is that you can change up the ingredients to suit your family, and it all still comes out delicious!

We drove through Custer National park and I was practically glued to the windows of the car, trying to catch any glimpse of the amazing beasts that I could.
