Free Meal Plan: Eggplant Basil Burgers

It's back to school! With school in, you need some delicious ideas for dinner. With a bit of barbeque weather still hanging on I included a few grill worthy recipes, something vegetarian,and even something for the crock pot. Just sharpen those pencils and you're good to go!

Over here on the coast of BC, the weather has been decidedly fall-like. Windy, rainy, cold-wouldn't yo agree that stew is the best way to warm up? My friend Audrey tried Michael Smith's beef stew, and says it's delicious! This recipe doesn't involve exact measurements, so if you're comfortable cooking with just some guidelines, this one is for you.

Do you cook ribs in the oven or on the barbeque? Over at Smitten Kitchen is a fantastic recipe for spareribs, with pictures enough to make you want to lick your computer screen. Jake has bookmarked this recipe with the insistance that we make it, as soon as humanly possible.

Dig out the crockpot and get ready to go with this yummy curried chick pea dish that you can spoon over rice. Carrie loves to serve this at home and says her kids will even eat it, which is a bonus! I added the juice from a lemon, 1 tsp of garam masala, some turkey meatballs, and my teenager just wolfed it down. What a great way to use up some of those fall veggies!

Jake and I were inspired last week by a mango sitting on the counter to make a fruit salsa to spoon over spicy chicken for dinner. The lime, mango, bits of pepper and firey jalapeno were beautiful with the spicy chicken. You can cook the chicken on your BBQ or in your oven-either way, it's amazing.

My family loves these burgers. Grilled bits of eggplant stacked with layers of cheese, pesto, and tomatoes come together inside a whole wheat bun to make one delicious vegetarian sandwich.
