Free Meal Plan: Chicken and Melon Salad

O, Canada! How I love salmon, pizza, and dinners on the deck while we watch fireworks and wave our red and white maple leaves! Make the most of this week with some really fantastic, company worthy dinners to enjoy with your families and friends. If it's too hot to cook, we definitely have you covered.

MONDAY

Whole Wheat Pizza Dough

Pizza is my favorite food of all time. This week I tried a new recipe from Andrea over at A Peek Inside the Fishbowl, and I switched around the flours to try whole wheat. Yum! It was delicious. This is a great recipe to try with kids as it doesn't taste any different from regular crust, and the good thing about pizza is you top it however you would like it.

TUESDAY

Mushroom roast beef and yorkshire puddings

The weather here is still a bit cool, but this time of year means a lot of entertaining in my world. Graduations, family reunions, you name it! This is a great recipe that you can use to get two meals from, or serve to a crowd. Best of all, it's all whipped up in your crockpot so it keeps your oven from heating up the kitchen! Merry obviously has more talent than I do when it comes to Yorkshire puddings. I haven't mastered those babies yet.

On the West Coast, we eat a lot of salmon and this recipe over at The Herbed Kitchen caught my eye the minute I saw the above picture. With a nice salad, this would be a great dinner on the deck. For those of you who are gluten free, The Herbed Kitchen has some really great looking recipes!

Pesto is my go to sauce around here when I don't know what to cook. We usually go for a jarred one, but this week Jake and I decided it would be fun to make our own. The results were delicious, and I think you could use the sauce for so many different things! This recipe, from the June issue of Bon Appetit, uses basil, parsley and tarragon to give a little different flavor.

If you are looking for something company worthy to nibble on a hot summer evening on the deck, this is the perfect salad for you. Citrusy grilled chicken, smoky grilled red pepper, tender avocado and sweet cantaloupe all combine to make one incredible salad.
