Inspired by The Pony restaurant in Pemberton BC, I re-created their famous berry goat cheese salad at home! This is so easy-candied pecans, creamy cranberry goat cheese, fresh berries, wisps of red onion, and fresh greens all drizzled with raspberry vinegarette. Add some roasted chicken on the side and you have a delicious dinner!

These croquettes can be made with white or sweet potatoes, and served with turkey apple meatballs. Make extra, and you have tomorrow's lunch!

Search Google for "Chicken Lyonnaise", and you will be directed right to Loralee and this recipe. Breaded chicken, sauted up until golden and then put in a delicious sauce is just the thing while the weather turns to fall.

Trying to clean out my fridge, I found a package of boneless beef short ribs and didn't know what to do with them so I browsed the internet and found this recipe.

Karen's Braised Short Ribs

About the Author
Karen (aka Scattered Mom) has been passionate about food since the 1970s, when she created tasty treats from her Easy Bake oven. Literally thrown into the kitchen at the tender age of 21 when she became foster Mom to 4 teenagers, it was pretty much a do or die situation. Her specialty? Cookies. Her real passion? Writing. Put them together with a marriage to a guy 20 years older, their own teenager, and life on the West Coast of Canada, and you have her blog, Notes from the Cookie Jar.
