Homemade Candy Recipes for Christmas

It’s getting close to Christmas gift season. Teachers love to receive homemade treats. Grab some aprons and the kids and make candy. No special equipment needed.

Candy Cane Bark

Ingredients:

1 package white chocolate chips. (approximately 2 cups)
Crushed candy canes or peppermint candy. About ½ cup

Cookie sheet, waxed paper.

Line a cookie sheet with wax paper. Set aside.

Crush the candy canes in a double Ziploc bag on a cutting board with meat tenderizer or rolling pin.

Melt the chocolate in a double boiler or a bowl over simmering (not boiling) water.

The bowl should be wider than the pot, and the bottom of the bowl should not touch the water. Be careful that no water splashes in to chocolate, or it will seize and you will need to start over. Keep the temperature low, and stir often.

Once chocolate is melted, remove from heat and spread it in a layer on waxed paper. Sprinkle it with candy. Allow to cool, break into pieces and store between layers of wax paper in tightly closed container in a cool place.

Marbled Almond Bark

Ingredients:

Milk, or dark chocolate, the best quality you can find. About ½ lb.
1 cup white chocolate
1 cup whole almonds

Cookie sheet, wax paper.

Line cookie sheet with wax paper. Set aside.

Toast the almonds in a little butter in a frying pan until they turn golden brown.

Melt the chocolate following the directions for Candy Cane bark.

Mix the almonds into the dark chocolate. Pour the mixture onto wax paper and spread into a layer.

To create a marbled effect, add dollops of white chocolate and swirl with a knife.

Allow to cool, break into pieces and store between sheets of wax paper in tightly closed container in cool place.

Chocolate Mounds

1 cup semisweet chocolate chips
½ cup butterscotch chips
1 tsp butter
1 cup salted peanuts, cashews or other nuts
1 cup chow mein noodles

Cookie sheets, wax paper

Line cookie sheets with wax paper. Set aside. Melt chocolate chips, butterscotch chips and butter together in a double boiler, stir well. Remove from heat and stir in nuts. Blend well.

Drop spoonfuls onto wax paper on cookie sheets. Cool in refrigerator until chocolate is firm and set.

Store between layers of wax paper in tightly closed container in cool place.
